Lemon Bars

1/3 cup powdered sugar
1 cup flour
1/3 cup corn starch
5 eggs
1/2 cup lemon juice
1/4 cup lemon zest
1/3 cup coconut oil
1/4 tsp vanilla

Prepare crust: Preheat oven to 325°F. In a medium bowl, whisk melted coconut oil, powdered sugar, and 1 egg together. Add the flour and stir to completely combine.

Prepare a sheet of parchment paper. Roll the dough on the parchment paper.

Prepare filling: In a medium bowl, whisk 4 eggs with vanilla. Add sugar, corn starch, lemon juice, lemon zest, and stir until completely combined.

Pour filling over warm crust. Bake for 25 minutes, or until set. Remove from the oven and let it cool down completely at room temperature.

Dust with powdered sugar.
